High temps
It’s been a long time since I’ve posted here because after several months of escaping it, we finally got bitten by the daycare bug. About 10 days ago, we were spending the weekend inside with Hazel, since the outside temperature was supposed to hit 103. Because of the heat wave, it took us a while to figure out that Hazel was coming down with a fever, instead of that she was sweating because our air-conditioner just can’t keep up with triple digit temps, but it became clear that she was coming down with something when lost her lunch. No fun! Luckily, Hazel bounced back very quickly.

Unfortunately, the same wasn’t true for me and Dan. I spent almost all of last week trying to kick the thing. That, on top of a week of high heat and humidity was tough.
Thankfully, the weekend offered a chance to relax and unwind. After a long week, pizza seemed like the right thing for Friday night, but it was too hot to turn the oven on. So I took a try at grilling up a mix of summer veggies. I can’t claim it was perfect - I need to figure out how to avoid hot spots scorching the crust - but it was a welcome relief from a tiring week.

Saturday’s meal was even speedier, using this awesome Cooking Light recipe for chicken kebabs and a nectarine salsa, to create some soft tacos with fresh peaches from the farmers’ market and tomatoes from our CSA. The marinade is fab, and makes for tasty, moist chicken in a flash.

By Sunday, I felt like I’d finally beat the bug and things cooled down enough that a morning run was fathomable. But by lunch time, a cold chicken and melon salad still seemed more appropriate than anything cooked.

Unfortunately, I don’t think this hot weather is going away anytime soon - it is August in North Carolina that we’re talking about. But at least we’re feeling back on our game and better able to roll with Mother Nature’s heat flashes. Do let me know if you have favorite hot weather fixes to recommend!
