About me
Hi! I'm Lindsey.

I'm a health educator, like to run at a slow, but steady pace, teach group fitness classes, and do my best to keep up with my family that's spread across the country. In the midst all of that, playing in the kitchen is one of my favorite stress relievers and creative outlets, so this blog chronicles some of my favorite cooking and baking adventures, but in the process it also tells the story of the rest of my life.

Like many people in the Triangle area, I'm a transplant. After spending the first 21 years of my life in the midwest, I've been settled in North Carolina for seven years. One of the things I love most about the area is the diversity of local farms, farmers' markets, and great food, so I follow lots of local food happenings, but I also keep up with my fair share of Midwestern favorites.

Swap!

After several years of experience swapping cookies around the holidays, I decided to try something a little healthier.  Yesterday, we gathered five families with small kids (ages 3 months - 1 year) and swapped dinners.

Each family made a big batch of one meal and then divided it up into four sets to give away.  We got all the kids together for a play date, laughed at their different skills, and enjoyed a simple dinner of sandwiches and apple slaw ourselves. 

I have to say, I think it was all quite a success. 

I traded Beef Daube Provencal for:

  • Chicken broccoli casserole
  • Black bean soup with chicken and salsa
  • Sausage and kale calzones
  • Cheesy vegetable soup

Yum!  Lots of variety, that’s ready to go after I get home from work, without having to resort to processed food, will be a great help now that I’ve returned to five day work weeks this week. 

Also, I learned that Quizno’s does catering and found a new favorite apple slaw!  I think we’re definitely going to try to repeat the swap in April.  Maybe that time we’ll be less distracted by the baby antics and remember to take some photos of the little ones all together!  Got any suggestions for favorite dishes that make a bunch to eat and share?  The prep once eat new food five different times is a definite win these days!
