About me
Hi! I'm Lindsey.

I'm a health educator, like to run at a slow, but steady pace, teach group fitness classes, and do my best to keep up with my family that's spread across the country. In the midst all of that, playing in the kitchen is one of my favorite stress relievers and creative outlets, so this blog chronicles some of my favorite cooking and baking adventures, but in the process it also tells the story of the rest of my life.

Like many people in the Triangle area, I'm a transplant. After spending the first 21 years of my life in the midwest, I've been settled in North Carolina for seven years. One of the things I love most about the area is the diversity of local farms, farmers' markets, and great food, so I follow lots of local food happenings, but I also keep up with my fair share of Midwestern favorites.

Changing gears

Since heading back to work, I’ve determined there are only two reasonable approaches to getting dinner on the table between Hazel’s dinner and dessert: reheating something I’ve made over the weekend or making something that’s ready in 15 minutes or less.  The second strategy is especially good if whatever I make bakes in about 25 minutes, so that I can stick it in the oven just before feeding Hazel, and then have it ready to eat as soon as she’s done.  Luckily, I’ve found some good dishes that have been helping make these strategies work, including:

Baked chicken and beans (prep the bean base beforehand, and then bake the chicken in it when you’re ready to eat)

Chicken verde stew with hominy (good weekend fix that reheats well)

Hummus vegetable pizza (using pre-made crust, you can smear this with hummus, add toppings and get this in the oven in less than five minutes - definitely a new favorite!)
