About me
Hi! I'm Lindsey.

I'm a health educator, like to run at a slow, but steady pace, teach group fitness classes, and do my best to keep up with my family that's spread across the country. In the midst all of that, playing in the kitchen is one of my favorite stress relievers and creative outlets, so this blog chronicles some of my favorite cooking and baking adventures, but in the process it also tells the story of the rest of my life.

Like many people in the Triangle area, I'm a transplant. After spending the first 21 years of my life in the midwest, I've been settled in North Carolina for seven years. One of the things I love most about the area is the diversity of local farms, farmers' markets, and great food, so I follow lots of local food happenings, but I also keep up with my fair share of Midwestern favorites.

Yummy things from last year

To recap, and to get myself back into the grove of regular cooking, here are some of my favorite dishes from 2010.  Some of these made it on to the blog previously, others didn’t, but I’ve been keeping track of them all on my Flickr stream

WINTER

Papa al pomodoro
From Dana Treat’s round-up of her best 2009 recipes. So glad she did that.  This soup is great, and I’m so glad she convinced me to make my own croutons.  They’re just wonderful together. 

Spicy quinoa salad
A really fresh way to mix up healthy pantry staples.  Craving this is what led me to look back at the year.

Cinnamon raisin bread
Totally forgot that I made this, but it turned out so great on my very first attempt that I really ought to repeat it.  I guess that’s why I’m reviewing the last year!

CSA salad
Mesculun greens and baby beets from Coon Rock Farm, along with goat cheese and pan fried chicken
Forget pre-made iceburg mixes; this is how I like salad!

Winter breakfast porridge
A hearty, healthy start to the day that’s delicious.  This has become a regular in the rotation; I like to make a big batch on the weekend and reheat it on hectic mornings.

Cranberry orange parfaits
A nice simple Valentine’s Day treat that taught me it’s really not hard to hand-whip your own whipped cream.

Baked rigatoni with kale
Great cold weather comfort food.  This year, I learned I liked kale more than I knew.

SPRING

Jamaican chicken
Pretty and full of spice, without being spicy.  A great way to mix up a boring chicken routine.

Pizza with pear, country ham and arugula
This actually used a store bought crust, and it was still fabulous.  Sweet, spicy and salty, all in a pizza.  So much better than pepperoni.

Banana fosters French toast
At Tassi, with Kelsey, in Columbus.  Such a good find.

Potato kale enchiladas
Bad photo, but great taste, and super filling.  I don’t know why I have made these again.  Definitely need to next time we get some CSA kale!  You should too!

Strawberries
Locally grown.  Hand picked.  ‘Nuf said.

From 732 Social in Louisville - great plain, devine with a little salt, local honey and apple butter

Happy Planet cookies
Chocolate, oatmeal, chewy, crunchy, and good for the Earth too!

Asian chicken and eggplant with basil
A very nice combination that I woudn’t have thought of on my own.  Thanks NY Times!

An excellent first dinner at Guglhupf - need to do that again!

Pumpkin waffles
I never posted about these because, well, I had other things going on - we made them the day my water broke, but they’re a favorite for sure. 

I haven’t made anything really grand since then, but I’m starting to get back into the kitchen more regularly.  So, happy new year and happy cooking!  Hopefully you’ll see some more good eats and recipes soon
