About me
Hi! I'm Lindsey.

I'm a health educator, like to run at a slow, but steady pace, teach group fitness classes, and do my best to keep up with my family that's spread across the country. In the midst all of that, playing in the kitchen is one of my favorite stress relievers and creative outlets, so this blog chronicles some of my favorite cooking and baking adventures, but in the process it also tells the story of the rest of my life.

Like many people in the Triangle area, I'm a transplant. After spending the first 21 years of my life in the midwest, I've been settled in North Carolina for seven years. One of the things I love most about the area is the diversity of local farms, farmers' markets, and great food, so I follow lots of local food happenings, but I also keep up with my fair share of Midwestern favorites.

If you like what you find here, feel free to drop me a note and email Yummy things. I'd love to hear from all of you out there!

Fresh start

It’s the time of year to look back on the pages we’ve just flipped on the calendar, while also laying out some new ambitions for the year ahead.  Last year I was able to do a whole post of food favorites from 2010; this year, you can tell we had a little one under foot.  I didn’t post nearly as much from the kitchen this year.  Not so much because I haven’t been cooking - I’ve become a total meal planning convert, but I’ve done a poor job of pulling my camera out between the hectic schedules of nursing and then teaching Hazel to feed herself.  So one of goals is definitely to do a little more documentation with my camera in 2012.  It’s fun to share, but it’s also a good reminder of things that fill us up and fuel our busy lives.

I did manage to capture a couple of favorites this year, including:

SOUPS

A hearty soup with cabbage, butternut squash, pinto beans and wheatberries - inspired by the NY Times

Chicken verde stew with hominy

SALADS

Curried wheatberry salad

Apple slaw with cilantro-lime vinaigrette

Quinoa and corn salad

MEATLESS MEALS

Creamy pesto with tomato vinaigrette

Hummus pizza

Trofie - pasta with pesto, potatoes and green beans

Lentils with chard

With this, you can tell that we’re not much of a meat and three kind of family.  Most of the time it works well for us - helping us eat healthy and seasonally,  but one of my goals for this year is to master roasting a chicken.  Any favorite recipes or tips?

Other goals for the year:

  • Get in 30 minutes of physical activity. Every. single. day.
  • Run 300 miles at work!  It averages out to 6 miles/week, which is totally do-able, but the point is to make sure I get those 6 miles in week after week.
  • Get over myself and re-learn to drive a standard car.
  • Stop hoarding recipes.  Either make them the month I pull them out of a magazine or the paper or just acknowledge there’s too much good food and too little time.
  • Get my e-mail under control, aka “Don’t just delete - unsubscribe!

Bottom line, the word for the year is “MOVE.”  Move my body.  Get a move on those things that are easy to just talk about.  Move on past all the things that there aren’t time for.  And keep up with the always moving Hazel!

Happy 2012!
