About me
Hi! I'm Lindsey.

I'm a health educator, like to run at a slow, but steady pace, teach group fitness classes, and do my best to keep up with my family that's spread across the country. In the midst all of that, playing in the kitchen is one of my favorite stress relievers and creative outlets, so this blog chronicles some of my favorite cooking and baking adventures, but in the process it also tells the story of the rest of my life.

Like many people in the Triangle area, I'm a transplant. After spending the first 21 years of my life in the midwest, I've been settled in North Carolina for seven years. One of the things I love most about the area is the diversity of local farms, farmers' markets, and great food, so I follow lots of local food happenings, but I also keep up with my fair share of Midwestern favorites.

Hanging on

The temperatures really dropped here over the weekend - we got our first dose of nights in the 40s!  It simultaneously made me crave all sorts of fall favorites, while also seeking one last round of all my summer favorites. The fact that I can cram both into a weekend makes this my favorite time of year!

This weekend, we had the perfect blending of the two seasons we’re straddling.  Upon heading out to go shopping at the farmers’ market, we stumbled upon a yard sale that had an excellent stock of fall kids clothing, despite the fact that we were hours past the usual peak shopping spree time in these parts (approximately 6:30 AM usually!).  It was perfect for us, since most of the clothes Hazel had been fitting into were sundresses.  Plus, nothing makes a little girl look more grown up than new school clothes!  And look at those Birkensocks!  ;-)

However, upon arriving at the market, I scooped up Sungolds, green beans, okra, and zucchini, and over the weekend, went to town whipping up some of the favorites we’ve enjoyed all summer long.

Wheatberry salad - such a perfect combination of flavors, even Hazel agrees!

Okra fritters - delicious enough to convince me to bring out the frying oil - if you think you don’t like okra, these will convince you otherwise!

Zucchini banana flaxseed muffins - wonderful for a workday snack

The best zucchini bread - a very good recipe, which is smart enough to make you a loaf of bread, plus 6 muffins to snack on

Okay, I’m kind of obsessed with zucchini baked goods, but I’ll transfer my love to pumpkin soon enough.
